Pass station

The Pass Station (often simply called “the pass”) is the final checkpoint within your kitchen where completed dishes are assembled, checked for accuracy and presentation, and then handed off to servers for delivery to customers. It plays a crucial role in directing kitchen operations for optimal timing and quality.

How the Pass Station works

  • Unified Order Tickets: unlike Prep Stations that receive tickets for only their specific items, the Pass Station receives a complete ticket for each order. This provides a full overview of all components.
  • Orchestration: the Pass Station acts as the conductor for the kitchen. Staff can assess the unified tickets to determine the optimal sequence for notifying Prep Stations to start cooking. This ensures all components of an order are finished in a synchronized way.
  • Quality & Accuracy: a designated staff member, often an experienced chef or expeditor, checks each assembled dish against the order details.
  • Final Touches: garnishes, sauces, or other finishing elements might be added at the Pass Station. Runner/Server Pickup: Waitstaff are notified when an order is ready at the pass, and they collect it for prompt delivery to the customer’s table.
